do not confuse:
- envelope addresses (used for transport and delivery)
- header addresses (what you see in From:, To:, Cc: ...)

if you want to rewrite headers, look at smtp_generic_maps and
canonical_maps. you probably need to read the ADDRESS REWRITE README.

you should not modify headers except when really needed and beneficial.
